One-Pot Beef Stroganoff

Who doesn't love Beef Stroganoff? Hint for moms: this is a good place to sneak in more veggies for the kids. The recipe below is standard but feel free to throw in whatever you wish your kids would eat.

Ingredients:

1 lbs grass-fed sirloin, ribeye, chuck, top round, or stew meat; cut into thin strips

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

8 oz mushrooms, sliced

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)

1 ½ cups beef broth

1 cup sour cream

8 oz egg noodles

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Directions:

  1. Sear the beef: Heat olive oil in a large pot over medium-high heat. Season the beef, sear for 2-3 minutes, and set aside.

  2. Cook the vegetables: Add more oil, sauté onions and garlic for 2-3 minutes, then cook mushrooms for 4-5 minutes until browned.

  3. Make the sauce: Stir in Worcestershire, Dijon, and thyme. Add beef broth and bring to a simmer.

  4. Cook the noodles: Add egg noodles to the pot, cover, and cook for 8-10 minutes, stirring occasionally.

  5. Finish: Stir in sour cream, return beef, and cook for 1-2 minutes until warmed throug
